Overnight Bircher-style Muesli…

Burcher museli v1It’s me again with another recipe!  Today I wanted to share with you the Bircher-style Muesli recipe.  I’m trying to cut down on my sugar intake so am looking at ways I can get the sweetness that I enjoy but without ladling on the refined, white, bleached table sugar we know and are addicted to!

Inspired by a colleague – who makes this for her eight-year-old daughter – I embarked on my own creation and let me tell you that it tastes INCREDIBLE and it keeps you going through the morning because the majority of the ingredients are Low on the GI index; always a BONUS.

Please bear in mind that I rarely weigh or measure anything (#mystyleofcooking) …

Ingredients

  • Greek Yogurt
  • Rolled Oats
  • Frozen Fruit – I used frozen pitted cherries and home-grown frozen blueberries
  • Honey – organic runny (I used Sarah’s Honey with fruit)
  • Coconut Sugar
  • A small Kilner Jar or Glass

Method

In the bottom of your chosen vessel put two dessertspoons of Greek yoghurt.  Cover the yoghurt with a layer of the rolled oats, top with a layer of frozen fruit and add a drizzle of honey.  Repeat this process until you are at the top of your jar or glass.  Sprinkle with a dusting of coconut sugar.

Leave this little beauty in the fridge overnight (for at least 12 hours) to allow the fruit to defrost and penetrate the oats.  Mix all the layers together before eating.
