A lazy Sunday morning breakfast of sweet potato waffles, bacon, avocado, field mushrooms and sprinkles; here’s the recipe…
- 1 medium sweet potato
- 1 free range egg
- 1 tbsp gluten free/ spelt
- Pinch of baking powder
- Dash of Hemp milk
- Ground black pepper
- Pinch of paprika (optional)
Microwave the sweet potato until cooked. Scoop out the cooked potato flesh, mix it with eggs, flour, baking powder and other ingredients.
Heat up the waffle making and pour in the batter and cook until golden.
Serve with bacon, avo, cooked mushrooms and sprinkles.
